Here's the delicious recipe for the Banana Cream Cheese Cake, requested by Scottie - glad to share the recipe although we wish we can share the actual cake too. Don't think it'll survive airmail :p Happy Baking!

Banana Cream Cheese Cake

Not highly recommended for dogs because of the high sugar & salt content. A tiny nibble should be fine : ) Latte got his.

Ingredients:

  • 3/4 cup (170g) salted butter, softened
  • 1 (8-ounce) pack of Philadelphia cream cheese, softened
  • 1 1/2 cup of sugar
  • 2 eggs, beaten
  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 cups mashed bananas (about 4 medium bananas)
  • 1 teaspoon vanilla extract

Preheat oven to 180˚C. Prepare two aluminum disposable loaf pans. In a big bowl, beat the softened butter and cream cheese at medium speed with an electric mixer until creamy. Or you could beat with human muscle power :p It's great toning exercise for the arms.

Add sugar slowly while beating, until it is light & fluffy. Add the eggs, one at a time, beating just until combined. Combine the flour, baking powder, baking soda in a small bowl - gradually add it to the mixture, beating at a low speed just until blended.

Stir in the bananas and vanilla. Scoop the batter into the loaf pans. Bake it in the preheated oven for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean and the sides pull away from the pan. You might need to bake for awhile longer than the time recommended. The toothpick needs to come out clean. For the last 15-20 mins of the baking, you might want to cover the cake with aluminum foil so that it doesn't burn.

Cool it before you slice and keep in the refrigerator.

Oooh Thank you, Mum has been eagerly awaiting the recipe. She is going to have a bash at this at the weekend, we will let you know how it turns out. Mum says I can taste test a crumb or two!
